Strawberry Discard Juice

Do you ever buy strawberries and feel like you are wasting half of them either because you cut the top off and throw it away or they go bad before you get them eaten?

I definitely used to feel that way. Till i stumbled across a TikTok (yes that is where i learn most of my helpful tips anymore) showing how to turn waste into bounty. Over the last few months i have tweaked it to fit my family.

Now with this base juice we enjoy homemade popsicles, strawberry lemonade, strawberry syrup, etc! You can even use this recipe for other fruits that have “gone bad”! That is the beauty of this simple but delicious juice.

For me the best part is i have figured out how to do it without processed sugars or preservatives!

Alright i am sure you are ready for me to stop raving and start sharing! I’ll humor you

Recipe:

One carton of strawberries

Soak and wash them in white vinegar and water. Cut the tops off of them and place in a pot along side of any “bad strawberries”.

2 cups of water

Pour the water in over the strawberry tops and place on a burner. Bring to a boil. Once at a boil reduce temp so it doesn’t boil over but continues to bubble for 10 minutes. Once all the color is gone from the tops (no longer red) strain the liquid into a separate bowl.

Place liquid back into original pot and back on the burner. Bing back to a simmer.

2 Tbsp (or as sweet as you like) raw honey

Pour the honey into the juice and stir until mixed in completely

Once everything is mixed pour into a container rated for the fridge. Allow your juice to cool on the counter. Once it is cool enough place in the fridge until you are ready to use.

Where this juice doesn’t have any preservatives i highly recommend using it as soon as possible (no more than 2 weeks). Ours never last more than a couple of days!
