Spinach Strawberry Salad

Summer seems to finally be here!!

With it comes heat and the lack of wanting to cook on my part. Since my health issues last year i have been on a journey to find healthy recipes that repair my gut, help me have energy and leave me feeling satisfied. This recipe hits all the markers for me!!

What could be better than a cold salad that has strawberries, honey, and nuts on a hot day?!

Not much in my opinion! Plus it is super easy and budget friendly to make! Score!!

Spinach- flushes out free radicals from your body that cause cancer, reduces blood sugar, anti-inflammatory, helps to relax your body, good for bone health and eyes

Strawberries-rich in vitamin C, magnesium, and other antioxidants, helps to lower risk of cancer, diabetes, stroke, and heart disease

Honey- anti-inflammatory, antioxidants and antibacterial agent, helps digestive issues, helps improve cholesterol

Balsamic vinegar- improve skin health, reduce blood sugar, promotes healthy digestive, stabilize blood pressure, helps lower cholesterol, good for helping detox the liver

Extra virgin olive oil- rich in healthy fats, large amounts of antioxidants, anti-inflammatory, may help prevent strokes, protective against heart disease, has antibacterial properties

Recipe:

Salad

1 bag of spinach

1 flat of strawberries ( or as much as your heart desires)

Wash and cut up strawberries throwing them in on top of your spinach in a bowl. Don’t throw away your strawberry tops because you can make a delicious lemonade to accompany this dish! (Recipe => https://www.ranchwifenecessities.com/life-of-a-ranch-wife/2023/4/27/xh7u8vxs8bbcidqit5uknemxatgg6o)

Dressing

1/4 cup balsamic vinegar

3 Tbsp extra Virgin oil

1 1/2 Tbsp honey

1/2 tsp salt

1/2-1 cup walnuts or pecans chopped or crushed like i do in the video

Optional

You can cut up a red onion and mix it in. My family are not huge raw onion fans, so we do not but i have seen some people do it.

Mix and pour dressing into your salad bowl and combine everything

Make sure not to place your dressing on your salad and strawberries till you are ready to serve to ensure your spinach doesn’t become soggy!

Serve this as a side dish with sandwiches or eat it by itself on super hot days!
